Ingredients

1 lb chicken tenders

1 cup panko breadcrumbs

1 cup grated Parmesan cheese

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 tablespoon Dijon mustard

Olive oil spray (or non-stick cooking spray)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare the Breading Station: Set up three shallow bowls. In the first bowl, beat the eggs and mix in the Dijon mustard. In the second bowl, combine panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, Italian seasoning, salt, and black pepper. Mix well to evenly distribute the seasonings.

      Coat the Chicken Tenders:

        - Dip each chicken tender first into the egg mixture, ensuring it’s fully coated.

          - Next, transfer it to the breadcrumb mixture, pressing gently to adhere the mixture onto the chicken. Make sure each tender is well coated for the crispiest results.

Arrange on the Baking Sheet: Place the coated chicken tenders on the prepared baking sheet, ensuring they are spaced apart to allow for even cooking. Lightly spray the tops with olive oil spray to enhance crispiness.

Bake: Bake in the preheated oven for 18-20 minutes, or until golden brown and cooked through (internal temperature should reach 165°F/74°C). For extra crispiness, you can switch to broil for the last 2-3 minutes of cooking, but keep a close eye to prevent burning.

Serve: Once cooked, remove from the oven and let the chicken tenders cool slightly. Serve with your favorite dipping sauces like marinara, honey mustard, or ranch dressing.
