Ingredients

12 ounces fresh mozzarella balls (bocconcini), drained

1 cup all-purpose flour

2 large eggs

1 cup panko breadcrumbs

1/4 cup freshly grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

Olive oil spray or cooking spray

Marinara sauce (for dipping)

Instructions

Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Prepare the mozzarella: Pat the mozzarella balls dry with paper towels to remove any excess moisture. This helps the coating adhere better and ensures they get crispy.

Set up the dredging station: In three separate shallow bowls, set out the flour, beaten eggs (whisked until smooth), and a mixture of panko breadcrumbs, Parmesan cheese, oregano, garlic powder, paprika, salt, and pepper.

Dredge the mozzarella: Take a mozzarella ball and coat it in flour, shaking off any excess. Next, dip it into the beaten eggs, allowing any extra to drip off. Finally, roll it in the panko mixture, ensuring it’s completely covered. Repeat with all the mozzarella balls.

Arrange on the baking sheet: Place the coated mozzarella rounds on the prepared baking sheet. Make sure they are spaced apart to allow for even cooking.

Spray with olive oil: Lightly spray the tops of the mozzarella rounds with olive oil spray. This will help them achieve a golden, crispy texture in the oven.

Bake: Bake in the preheated oven for 10-12 minutes or until golden brown and crispy. Keep an eye on them to ensure they don’t over-brown.

Serve: Once baked, remove from the oven and let them cool slightly. Serve warm with marinara sauce for dipping.
