Ingredients

For the Fish:

1 lb white fish fillets (like cod or tilapia)

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs

1 tsp garlic powder

1 tsp paprika

1/2 tsp cumin

1/2 tsp salt

1/4 tsp black pepper

Zest of 1 lime

Cooking spray or olive oil for drizzling

For the Avocado Sauce:

1 ripe avocado

1/2 cup Greek yogurt or sour cream

1 tablespoon lime juice

1 clove garlic, minced

Salt and pepper to taste

A handful of fresh cilantro (optional)

For the Tacos:

8 small corn or flour tortillas

1 cup shredded cabbage (green or purple)

Sliced radishes, for garnish

Lime wedges, for serving

Instructions

Preheat the Oven:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

      Prepare the Fish:

Rinse the fish fillets and pat them dry with paper towels. Cut them into strips or chunks, depending on your preference.

          Set Up the Breading Station:

In three separate shallow bowls, set up the dredging station:

              - In the first bowl, place the all-purpose flour mixed with garlic powder, paprika, cumin, salt, and pepper.

                - In the second bowl, beat the eggs.

                  - In the third bowl, combine the panko breadcrumbs and lime zest.

                    Bread the Fish:

Dredge each piece of fish in the flour mixture, shaking off any excess. Next, dip it in the beaten eggs, and finally coat with the panko mixture, pressing gently to adhere. Place the breaded fish on the prepared baking sheet.

                        Bake the Fish:

Spray the fish lightly with cooking spray or drizzle with olive oil. Bake in the preheated oven for about 15-20 minutes, or until the fish is cooked through and the coating is golden and crispy, turning halfway through.

                            Make the Avocado Sauce:

While the fish is baking, prepare the avocado sauce. In a blender or food processor, combine the avocado, Greek yogurt, lime juice, minced garlic, cilantro (if using), salt, and pepper. Blend until smooth. Adjust seasoning to taste.

                                Warm the Tortillas:

Wrap the tortillas in aluminum foil and warm them in the oven for the last 5 minutes of the fish baking time, or heat them in a skillet over medium heat for about 30 seconds per side.

                                    Assemble the Tacos:

To assemble, place some shredded cabbage in the center of each tortilla, add pieces of crispy fish, and drizzle with the avocado sauce. Garnish with sliced radishes and lime wedges.

                                        Serve:

Enjoy your crispy baked fish tacos warm with extra avocado sauce on the side!
