1 cup panko breadcrumbs

1 tbsp paprika

1 tsp garlic powder

1 tsp onion powder

Salt and pepper to taste

Cooking spray or olive oil for greasing

For the Sweet Potato Fries:

2 large sweet potatoes, peeled and cut into fries

2 tbsp olive oil

1 tsp paprika

1 tsp garlic powder

½ tsp cayenne pepper (optional for heat)

Salt to taste

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line two baking sheets with parchment paper.

    Prepare the Fish Sticks:

      - In a shallow bowl, mix the flour with salt, pepper, paprika, garlic powder, and onion powder.

        - Dip each fish strip into the flour mixture, ensuring it’s fully coated, then shake off excess flour.

          - Next, dip the flour-coated fish into the beaten eggs, letting any excess drip off.

            - Finally, coat the fish strips with panko breadcrumbs, pressing gently to adhere.

              Prepare the Sweet Potato Fries:

                - In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, cayenne pepper (if using), and salt until evenly coated.

                  - Spread the fries out on one of the prepared baking sheets in a single layer.

Bake the Fish Sticks and Sweet Potato Fries:

                      - Place the fish sticks on the second prepared baking sheet in a single layer.

                        - Lightly spray the tops of the fish sticks with cooking spray or drizzle a little olive oil.

                          - Put both baking sheets in the preheated oven. Bake the sweet potato fries for about 25-30 minutes, flipping halfway through, until golden and crispy. Bake the fish sticks for about 12-15 minutes, or until golden brown and cooked through.

Serve: Once cooked, plate the crispy fish sticks and sweet potato fries together. Serve with your favorite dipping sauces such as tartar sauce, ketchup, or a spicy mayo!
