1 lb chicken tenderloins

1 cup buttermilk

1 cup panko breadcrumbs

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional, for a kick)

Olive oil spray

Honey Mustard Dip:

¼ cup Dijon mustard

¼ cup honey

1 tablespoon apple cider vinegar

Marinate the Chicken:

    In a large bowl, combine the chicken tenderloins and buttermilk. Ensure all pieces are well-coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

      Preheat the Oven:

            In a shallow dish, mix the flour, paprika, garlic powder, onion powder, salt, black pepper and cayenne pepper. In another shallow dish, place the panko breadcrumbs.

              Bread the Chicken:

                Remove the marinated chicken from the refrigerator. Let any excess buttermilk drip off, then dredge each tenderloin in the flour mixture, shaking off the excess. Next, dip it back into the buttermilk briefly before coating it with the panko breadcrumbs, pressing lightly to ensure adherence.
