4 boneless, skinless chicken breasts

1 cup panko breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (oregano, basil, thyme)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 large eggs

1/4 cup all-purpose flour

1 cup marinara sauce (store-bought or homemade)

1 1/2 cups mozzarella cheese, shredded

1/4 cup fresh basil leaves, chopped

Zest of 1 lemon

1 tablespoon olive oil for drizzling

Optional: extra basil leaves for garnish

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

    Prepare the Chicken: If the chicken breasts are thick, butterfly them in half to create thin cutlets. This will help them cook faster and become crispy.

      Set Up Breading Station: In three separate shallow bowls, prepare the coating.

        - In the first bowl, place the flour mixed with a pinch of salt and pepper.

          - In the second bowl, beat the eggs.

            - In the third bowl, combine panko breadcrumbs, grated Parmesan cheese, dried herbs, garlic powder, onion powder, and lemon zest. Mix well.
