Crispy Baked Chicken Fajitas with Peppers

1 pound boneless, skinless chicken breasts, sliced into thin strips

2 bell peppers (red and green), sliced into thin strips

1 medium onion, sliced into thin strips

3 tablespoons olive oil

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional for heat)

8 small flour or corn tortillas

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper.

    Prepare the Chicken and Vegetables: In a large mixing bowl, add the chicken strips, sliced bell peppers, and onion. Drizzle with olive oil.

      Season the Mixture: In a small bowl, mix together the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper if using. Sprinkle this spice mixture over the chicken and vegetables.

        Toss to Combine: Use your hands to thoroughly coat the chicken and vegetables with the olive oil and spice mixture. Spread them evenly on the prepared baking sheet in a single layer.

          Bake: Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly crispy at the edges. Stir halfway through cooking for even browning.

            Warm the Tortillas: While the chicken and vegetables are baking, wrap the tortillas in aluminum foil and warm them in the oven during the last 5 minutes of baking.
