8 oz (225 g) pasta of choice (penne or fettuccine works well)

2 medium zucchinis, sliced into half-moons

1 cup cherry tomatoes, halved

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated parmesan cheese

2 tbsp olive oil

1 tsp dried Italian herbs (basil, oregano, thyme)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Red pepper flakes, for a kick (optional)

Instructions
 

Cook the Pasta:

    Start by boiling a large pot of salted water. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

      Sauté the Vegetables:

        In a large skillet, heat the olive oil over medium heat. Once hot, add the minced garlic and sliced zucchinis. Sauté for about 5-7 minutes until the zucchini starts to soften and becomes slightly golden.

          Add Tomatoes:

            Stir in the halved cherry tomatoes and cook for another 3-4 minutes, until the tomatoes begin to soften and release their juices. Season the mixture with Italian herbs, salt, and pepper.

              Make the Creamy Sauce:

                Lower the heat and pour in the heavy cream, stirring to blend all the ingredients. Allow it to simmer gently for about 3-4 minutes, letting it thicken slightly.

                  Combine Pasta and Sauce:

                    Add the cooked pasta to the skillet with the creamy zucchini and tomato sauce. Toss everything to coat the pasta evenly. You can add reserved pasta water a little at a time to reach your desired creaminess.

                      Add Cheese:

                        Sprinkle in the grated parmesan cheese, stirring until it melts into the sauce, making it rich and creamy.

                          Serve:
