8 oz fettuccine or spaghetti pasta

2 medium zucchini, spiralized or sliced into thin rounds

1 lb boneless, skinless chicken breasts, cut into bite-sized pieces

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon dried Italian herbs (or a mix of oregano, basil, and thyme)

Fresh basil leaves for garnish (optional)

Zest of 1 lemon

Juice of 1/2 lemon

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken pieces, seasoning them with salt, pepper, and dried Italian herbs. Cook for about 5-7 minutes, until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.

      Sauté the Zucchini and Garlic: In the same skillet, add a little more olive oil if needed. Add the minced garlic and sauté for about 30 seconds until fragrant. Then add the spiralized zucchini (or zucchini rounds) and cook for an additional 3-4 minutes, until just tender.
