2 tbsp olive oil

1 tbsp unsalted butter

1 medium onion, finely chopped

3 cloves garlic, minced

16 oz (450 g) mixed wild mushrooms (e.g., shiitake, cremini, oyster), sliced

1 tsp fresh thyme leaves (or ½ tsp dried thyme)

1 cup heavy cream

½ cup grated Parmesan cheese (plus more for serving)

Salt and black pepper, to taste

2 tbsp fresh parsley, chopped (for garnish)

Zest of 1 lemon (optional)

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the rest and set aside.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil and butter. Once melted, add the chopped onion. Sauté for 3-4 minutes until the onion becomes translucent. Add the minced garlic and sauté for an additional minute until fragrant.
