8 ounces elbow macaroni (or any pasta of your choice)

1 cup broccoli florets

1 cup carrot, diced

1 cup bell pepper, diced (red or yellow)

1 cup frozen peas

3 tablespoons butter

3 tablespoons all-purpose flour

2 cups whole milk

1 cup sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1/2 cup Parmesan cheese, grated

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/2 cup breadcrumbs (optional)

Fresh parsley for garnish (optional)

Cook the Pasta: Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. In the last 2 minutes of cooking, add the broccoli florets, diced carrots, and frozen peas. Drain and set aside.

    Make the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until lightly golden. Gradually whisk in the whole milk, making sure to avoid lumps. Bring to a simmer and continue to whisk until the mixture thickens, about 3-5 minutes.

      Add Cheese and Seasoning: Lower the heat and stir in the sharp cheddar cheese, mozzarella cheese, and half of the Parmesan cheese until melted and smooth. Add the garlic powder, onion powder, paprika, salt, and pepper. Taste and adjust seasoning as desired.
