1 medium onion, diced

3 cloves garlic, minced

2 carrots, diced

2 celery stalks, diced

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes (adjust to taste)

4 cups vegetable broth

2 cans (15 oz each) cannellini beans, drained and rinsed

1 cup fresh spinach

1 cup coconut milk (or heavy cream for a non-vegan option)

Salt and black pepper to taste

Fresh parsley, chopped, for garnish

Sauté the Base: In a large pot, heat the olive oil over medium heat. Add the diced onion, and cook until translucent, about 5 minutes. Add the minced garlic, carrots, and celery, cooking for another 5-7 minutes until the vegetables begin to soften.

    Add Spices: Stir in the dried oregano, thyme, and red pepper flakes, allowing the spices to toast for 1-2 minutes, enhancing their flavors.

      Introduce the Broth: Pour in the vegetable broth and add the rinsed cannellini beans. Bring to a gentle simmer, letting the soup cook for about 15 minutes to meld the flavors.

        Creaminess Factor: Add the fresh spinach and coconut milk to the pot, stirring until the spinach wilts. Use an immersion blender to purée the soup until smooth, or transfer half of the soup to a blender and blend it, then stir it back into the pot for a creamy texture.

          Season to Taste: Season the soup with salt and black pepper to your liking. Let it simmer for an additional 5-10 minutes to allow the flavors to deepen.

            Serve: Ladle the creamy soup into bowls and garnish with chopped fresh parsley. Optionally, serve with crusty bread on the side for dipping.
