3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups vegetable broth

1 teaspoon dried oregano

Salt and pepper, to taste

1 package (9 oz) fresh or frozen tortellini (cheese or meat-filled)

1 cup heavy cream (or coconut cream for a lighter version)

1 cup fresh basil leaves, chopped

Grated Parmesan cheese, for serving (optional)

Instructions
 

Sauté Aromatics: In a large pot over medium heat, add the olive oil. Once hot, incorporate the diced onion and sauté until translucent (about 5-7 minutes). Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Tomatoes & Broth: Pour in the crushed tomatoes and vegetable broth. Stir in the dried basil, oregano, red pepper flakes, and season with salt and pepper. Bring the mixture to a simmer.

      Cook Tortellini: Once simmering, stir in the tortellini and cook according to package instructions (usually 5-7 minutes), until they float to the top and are tender.

        Make it Creamy: Reduce the heat to low and stir in the heavy cream, mixing well until fully incorporated. Allow the soup to heat through for about 2-3 minutes.
