Creamy Tomato Basil Tortellini Skillet

1 (9 oz) package refrigerated cheese tortellini

2 tablespoons olive oil

3 cloves garlic, minced

1 (14.5 oz) can fire-roasted diced tomatoes, undrained

1 cup heavy cream

1 teaspoon dried basil

½ teaspoon salt

¼ teaspoon black pepper

1 cup fresh spinach

¼ cup grated Parmesan cheese

Fresh basil leaves, for garnish

Instructions
 

Cook the Tortellini: In a large pot, bring salted water to a boil. Add the cheese tortellini and cook according to package instructions until al dente. Drain and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add Tomatoes: Pour in the fire-roasted diced tomatoes (with juice) into the skillet. Stir to combine and let it simmer for about 3-4 minutes.

        Make it Creamy: Lower the heat and add in the heavy cream, dried basil, salt, and black pepper. Stir the mixture until well combined and let it simmer for another 3-5 minutes until it thickens slightly.

          Incorporate Spinach and Tortellini: Add the fresh spinach and cooked tortellini to the skillet. Gently fold everything together, allowing the spinach to wilt and the tortellini to heat through for about 2 minutes.
