Creamy Tomato Basil Soup

1 can (28 oz) crushed tomatoes

2 cups vegetable broth (or chicken broth)

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional)

1 cup heavy cream (or coconut cream for a vegan option)

1/4 cup fresh basil leaves, chopped (plus extra for garnish)

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
