12 oz fettuccine or your pasta of choice

2 tablespoons olive oil

3 cloves garlic, minced

1 can (14 oz) crushed tomatoes

1 cup heavy cream

1 teaspoon dried oregano

Salt and pepper to taste

1/2 cup grated Parmesan cheese

1 cup fresh basil leaves, roughly chopped

Optional: red pepper flakes for heat

Fresh basil leaves (for garnish)

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

    Sauté Aromatics: In a large skillet over medium heat, heat the olive oil. Add minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

      Add Tomatoes & Cream: Pour in the crushed tomatoes and stir to combine. Allow the mixture to simmer for 5 minutes, then reduce the heat to low and stir in the heavy cream.

        Season the Sauce: Add the dried oregano, salt, and pepper to taste. If you like a kick, sprinkle in red pepper flakes. Let the sauce simmer for another 3-4 minutes until it thickens slightly.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat it in the creamy tomato mixture. If the sauce is too thick, gradually add reserved pasta water until desired consistency is reached.

            Add Cheese and Basil: Stir in the grated Parmesan cheese and chopped basil leaves, mixing until well combined. Taste and adjust seasoning if needed.
