8 oz rice noodles (or your favorite noodle)

1 cup coconut milk

1/4 cup creamy peanut butter

2 tbsp soy sauce

1 tbsp lime juice (freshly squeezed)

1 tbsp sesame oil

1 tbsp honey or maple syrup

1 tsp sriracha (adjust for spice preference)

2 cloves garlic, minced

1-inch piece of ginger, grated

1/2 cup shredded carrots

1 red bell pepper, thinly sliced

1 cup broccoli florets

1/4 cup chopped green onions (for garnish)

1/4 cup crushed peanuts (for garnish)

Fresh cilantro (for garnish)

Instructions
 

Cook the Noodles: Bring a large pot of water to a boil. Add the rice noodles and cook according to package instructions (usually about 4-5 minutes). Drain and set aside.
