2 large sweet potatoes, peeled and cubed

1/2 cup Greek yogurt

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 teaspoon honey

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (optional, for heat)

1/4 cup red onion, finely chopped

1/4 cup celery, diced

1/4 cup dried cranberries

1/4 cup roasted pecans, chopped

Salt and pepper to taste

Fresh parsley or cilantro for garnishing

Instructions
 

Cook the Sweet Potatoes: In a large pot, add cubed sweet potatoes and cover with water. Bring to a boil and cook for about 12-15 minutes, or until fork-tender. Drain and let cool completely.
