2 cups rolled oats

1 cup creamy sunflower butter

1/2 cup maple syrup or honey

1/2 cup shredded coconut (unsweetened)

1/4 cup chia seeds

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup mini chocolate chips (optional)

1/2 cup dried fruits (like cranberries or raisins, optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, chia seeds, and salt. Stir well to combine all the dry ingredients evenly.

      Combine Wet Ingredients: In another bowl, mix together the creamy sunflower butter, maple syrup (or honey), and vanilla extract until smooth and well combined. You may want to microwave the sunflower butter for 10-15 seconds for easier mixing.

        Combine Mixtures: Pour the wet mixture into the dry ingredients and stir until everything is thoroughly combined. If you’re adding chocolate chips or dried fruits, fold them into the mixture at this point.

          Press into Baking Dish: Transfer the mixture into the prepared baking dish. Using the back of a spoon or a spatula, press the mixture down firmly and evenly into the dish, making sure it’s compact.

            Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown.

              Cool: Remove from the oven and let it cool in the pan for about 10 minutes. Then, using the parchment overhang, lift the bars out of the pan and place them on a wire rack to cool completely before cutting.

                Cut and Serve: Once cooled, cut into bars or squares. Store them in an airtight container at room temperature for up to a week or refrigerate for longer shelf life.
