12 oz fettuccine or linguine pasta

1 lb large shrimp, peeled and deveined

1 cup sun-dried tomatoes in oil, chopped

3 cloves garlic, minced

1 cup heavy cream

1 cup parmesan cheese, grated

2 cups spinach, fresh

2 tbsp olive oil

1 tsp red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves, for garnish

Zest of 1 lemon

Cook the Pasta: In a large pot of salted boiling water, cook fettuccine or linguine according to package instructions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the peeled and deveined shrimp. Sprinkle with salt, pepper, and red pepper flakes. Cook for about 2-3 minutes on each side until the shrimp turns pink and opaque. Remove shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the minced garlic and chopped sun-dried tomatoes. Sauté for about 1-2 minutes until fragrant. Lower heat and pour in the heavy cream, stirring well to combine.

        Add Parmesan and Spinach: Gradually add the grated parmesan cheese, stirring continuously until melted and creamy. Fold in the fresh spinach, letting it wilt into the sauce. If the sauce is too thick, use some reserved pasta water to reach desired consistency.

          Combine Pasta and Shrimp: Return the cooked shrimp to the skillet, along with the fettuccine or linguine. Toss everything together until the pasta is coated in the creamy sauce. Adjust seasoning with more salt and pepper if necessary.
