Ingredients

1 lb (450g) gnocchi (store-bought or homemade)

1 cup sun-dried tomatoes (packed in oil, chopped)

2 tablespoons olive oil (from sun-dried tomato jar)

4 cloves garlic (minced)

1 cup heavy cream

1 tablespoon balsamic vinegar

1 teaspoon dried basil

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh basil leaves (for garnish)

Optional: Red pepper flakes (for a spicy kick)

Instructions

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top, usually about 2-3 minutes. Drain and set aside.

Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.

Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and cook for another 2-3 minutes to let their flavors infuse.

Make the Cream Sauce: Pour in the heavy cream and balsamic vinegar, stirring well to combine. Bring the mixture to a gentle simmer, and allow it to cook for 2-4 minutes until it slightly thickens.

Season the Sauce: Add the dried basil, salt, and pepper to taste. Taste the sauce and adjust the seasoning if necessary.

Combine with Gnocchi: Gently fold the cooked gnocchi into the cream sauce, making sure each piece is well coated. Allow it to heat through for another 1-2 minutes.

Add Cheese: Stir in the grated Parmesan cheese until melted and creamy. If the sauce is too thick, you can add a splash of reserved pasta water to reach your desired consistency.

Serve: Plate your creamy sun-dried tomato gnocchi and garnish with fresh basil leaves and a sprinkle of red pepper flakes if desired.
