12 oz fettuccine pasta

1 cup sun-dried tomatoes, packed in oil, drained and roughly chopped

4 cloves garlic, minced

2 cups heavy cream

1 cup freshly grated Parmesan cheese

1/2 cup cream cheese, softened

1 tsp Italian seasoning

Salt and freshly ground black pepper, to taste

2 tbsp olive oil (from sun-dried tomatoes)

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Cook the Pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Aromatics: In a large skillet over medium heat, add the olive oil from the sun-dried tomatoes. Once heated, add the minced garlic and sauté for about 1 minute until fragrant, being careful not to let it burn.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and sauté for an additional 2-3 minutes to combine the flavors.

        Create the Sauce: Lower the heat to medium-low and pour in the heavy cream. Bring to a gentle simmer, stirring frequently. Add in the cream cheese and stir until melted and well incorporated.

          Incorporate Cheese: Gradually add the Parmesan cheese while stirring continuously until the sauce is smooth. If the sauce is too thick, gradually mix in reserved pasta water to reach desired consistency.

            Season: Mix in the Italian seasoning, and then taste and adjust the seasoning with salt and freshly ground black pepper as needed.
