Ingredients

1 cup polenta (cornmeal)

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free option)

2 cups fresh spinach, chopped

1 cup parmesan cheese, grated (or nutritional yeast for a vegan option)

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

½ teaspoon nutmeg (optional)

Red pepper flakes for garnish (optional)

Optional toppings: cherry tomatoes, avocado slices, or poached egg

Instructions

Prepare the Polenta: In a medium saucepan, bring the vegetable broth to a boil. Gradually whisk in the polenta, stirring constantly to avoid lumps. Reduce the heat to low and continue stirring for about 20-25 minutes, until the polenta thickens and pulls away from the sides of the pan.

Add Cream and Cheese: Stir in the heavy cream and grated parmesan cheese (or nutritional yeast). Mix until smooth and creamy. Season with salt, pepper, and nutmeg if using. Keep warm on low heat.

Sauté Spinach: In a separate skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute. Add the chopped spinach and cook until wilted, about 3-4 minutes. Season with salt and pepper to taste.

Assemble the Bowls: To serve, spoon the creamy polenta into bowls. Top with the sautéed spinach and any additional toppings such as cherry tomatoes, avocado slices, or a poached egg if desired.

Garnish & Serve: Sprinkle with red pepper flakes for a bit of heat, if you like. Enjoy your delicious and comforting Creamy Spinach Polenta Bowls!
