Ingredients

2 cups of fresh spinach, chopped

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 egg

1 package (9 oz) fresh or frozen ravioli (cheese-filled)

2 tbsp olive oil

2 cloves garlic, minced

1 cup heavy cream

1/2 tsp nutmeg

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions

Prepare the Filling: In a medium bowl, combine the chopped spinach, ricotta cheese, mozzarella, grated Parmesan, egg, salt, and pepper. Mix well until all the ingredients are fully combined.

Boil the Ravioli: In a large pot, bring salted water to a boil. If using fresh ravioli, cook according to package instructions (usually 2-3 minutes). Frozen ravioli will take about 4-5 minutes. Drain and set aside, keeping them warm.

Make the Sauce: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant (about 1 minute). Slowly pour in the heavy cream, stirring continuously. Bring the mixture to a gentle simmer.

Season the Sauce: Stir in the nutmeg, and season with salt and pepper to taste. Allow it to simmer for about 3-4 minutes until it slightly thickens.

Combine: Gently fold in the cooked ravioli into the creamy sauce, making sure they are well coated. Let them cook together for another 2 minutes, allowing the flavors to meld.

Serve: Plate the ravioli and top with additional grated Parmesan and fresh basil, if desired. Enjoy your creamy spinach cheese ravioli warm!
