12 large jumbo pasta shells

2 cups fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

1 cup ricotta cheese

1 cup shredded mozzarella cheese (divided)

1/2 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/4 teaspoon nutmeg

Salt and pepper to taste

2 cups marinara sauce

1 tablespoon olive oil

Fresh basil leaves, for garnish (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the jumbo shells according to package instructions until al dente. Drain and set aside to cool slightly.

      Prepare the Filling: In a large mixing bowl, combine the ricotta cheese, half of the shredded mozzarella cheese, Parmesan cheese, chopped spinach, garlic powder, nutmeg, salt, and pepper. Mix until well combined.

        Fill the Shells: Using a spoon, carefully fill each cooked pasta shell with the creamy spinach and ricotta mixture. Place the filled shells in a greased baking dish.

          Add Marinara Sauce: Once all shells are filled, pour the marinara sauce evenly over the pasta shells, ensuring all are well coated. Sprinkle the remaining mozzarella cheese on top.
