Creamy Spinach and Chicken Pasta Bake

8 oz (225g) penne pasta

2 tablespoons olive oil

1 medium onion, finely chopped

2 garlic cloves, minced

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

4 cups fresh spinach, roughly chopped

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1/2 cup cream cheese, softened

1/4 cup breadcrumbs (optional for topping)

Fresh basil or parsley for garnish

Instructions
 

Cook Pasta: Preheat your oven to 375°F (190°C). In a large pot of salted boiling water, cook the penne pasta until al dente according to package instructions. Drain and set aside.

    Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

      Cook Chicken: Add the chicken pieces to the skillet, seasoning with Italian seasoning, red pepper flakes, salt, and pepper. Cook until the chicken is browned and cooked through, about 6-8 minutes. If necessary, adjust seasoning.

        Add Spinach and Cream: Stir in the chopped spinach, heavy cream, chicken broth, and cream cheese. Mix well until the cream cheese is fully melted and incorporated. Allow the mixture to simmer for 2-3 minutes until slightly thickened.

          Combine with Pasta: In a large mixing bowl, combine the cooked pasta with the creamy spinach and chicken mixture. Add half of the Parmesan cheese and one-third of the mozzarella cheese, stirring until well combined.

            Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch (23x33 cm) baking dish. Spread it evenly and top with the remaining mozzarella and Parmesan cheese. If desired, sprinkle breadcrumbs on top for added crunch.

              Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is bubbly and golden brown.
