Creamy Spinach and Chicken Pasta Bake

8 ounces (225g) penne pasta

2 cups cooked chicken breast, shredded or diced

2 cups fresh spinach (or 1 cup frozen spinach, thawed and drained)

1 cup ricotta cheese

1 cup heavy cream

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Drain and set aside.

      Sauté Spinach and Garlic: In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Then, add the fresh spinach and cook until wilted (if using frozen, ensure it’s heated through). Season with salt, pepper, and red pepper flakes if desired. Remove from heat.

        Prepare the Creamy Sauce: In a large bowl, combine the ricotta cheese, heavy cream, Italian seasoning, salt, and pepper to taste. Mix until smooth and creamy.

          Combine Ingredients: In the bowl with the creamy sauce, add the cooked pasta, sautéed spinach and garlic, and shredded chicken. Toss everything together until well combined.

            Layer the Bake: In a greased 9x13 inch (23x33cm) baking dish, spread half of the pasta mixture. Sprinkle half of the mozzarella cheese on top. Layer the remaining pasta mixture over this, and then top with the remaining mozzarella cheese and all the grated Parmesan cheese.

              Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for about 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.
