Creamy Spinach and Cheese Stuffed Shells

Ingredients
  

20 large pasta shells

2 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 cup cream cheese, softened

1 clove garlic, minced

1 tsp onion powder

1 tsp Italian seasoning

Salt and pepper, to taste

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the pasta shells according to package directions until al dente. Drain and set aside to cool slightly.

      In a large skillet over medium heat, add a drizzle of olive oil and sauté the minced garlic for about 1 minute, until fragrant.

        Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat.

          In a mixing bowl, combine ricotta cheese, half of the mozzarella cheese, cream cheese, grated Parmesan, sautéed spinach, onion powder, Italian seasoning, salt, and pepper. Stir until blended and smooth.

            Fill each pasta shell with the cheese and spinach mixture using a spoon or a piping bag.

              Spread half of the marinara sauce in the bottom of a 9x13 inch baking dish. Place the stuffed shells in the dish, open side up.

                Pour the remaining marinara sauce over the stuffed shells and sprinkle with the remaining mozzarella cheese.

                  Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and lightly golden.

                    Remove from the oven and let it cool for about 5 minutes before serving. Garnish with fresh basil leaves if desired.
