Ingredients

4 boneless, skinless chicken breasts

2 cups fresh spinach, chopped

1 cup sharp cheddar cheese, grated

1/2 cup cream cheese, softened

2 cloves garlic, minced

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

1/4 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Spinach Mixture:

      - In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

        - Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let cool slightly.

          Make the Filling:

            - In a mixing bowl, combine the wilted spinach, cream cheese, grated cheddar cheese, onion powder, garlic powder, smoked paprika, salt, and pepper. Mix well until everything is evenly combined.

              Prepare the Chicken Breasts:

                - Using a sharp knife, gently create a pocket in each chicken breast without cutting all the way through. Season each breast with salt and pepper.

                  Stuff the Chicken:

                    - Generously spoon the spinach and cheese mixture into each chicken pocket. Secure the openings with toothpicks if necessary.

                      Sear the Chicken:

                        - In the same skillet, heat the remaining tablespoon of olive oil over medium-high heat. Add the stuffed chicken breasts and sear for about 4-5 minutes on each side, until golden brown.

                          Bake the Chicken:

                            - Transfer the seared chicken breasts to a baking dish. If using breadcrumbs, sprinkle them on top for added texture.

                              - Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F / 75°C).

                                Garnish and Serve:

                                  - Remove from the oven, let rest for 5 minutes, then garnish with chopped fresh parsley before slicing. Serve warm.
