12 ounces rigatoni pasta

1 tablespoon olive oil

1 pound Italian sausage (mild or spicy, casings removed)

3 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon red pepper flakes (optional)

1/2 cup white wine (or chicken broth)

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup baby spinach

Salt and pepper, to taste

Fresh basil leaves, for garnish

Additional Parmesan cheese, for serving

Cook the Pasta: In a large pot of boiling salted water, cook the rigatoni according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Sauté the Sausage: In a large skillet over medium heat, add olive oil. Once hot, add the Italian sausage, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.

      Add Aromatics: To the skillet with the sausage, add the chopped onion. Sauté until translucent, about 3-4 minutes. Stir in the minced garlic and red pepper flakes (if using) and cook for another minute until fragrant.

        Deglaze: Pour in the white wine (or chicken broth) and let it simmer for about 2-3 minutes, scraping up any brown bits from the bottom of the skillet.

          Create the Sauce: Reduce the heat to low and add the heavy cream, stirring well to combine. Allow the sauce to simmer for an additional 3-4 minutes to thicken.

            Combine Ingredients: Add the cooked rigatoni and baby spinach to the skillet, tossing to coat the pasta in the creamy sauce. If the sauce is too thick, add a little reserved pasta water to reach desired consistency.
