Ingredients

2 lbs ripe tomatoes, halved

1 medium onion, quartered

4 cloves garlic, peeled

3 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon dried basil

1 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional)

4 cups vegetable broth

1 cup heavy cream (or coconut milk for a dairy-free version)

Fresh basil leaves, for garnish

Croutons or grilled cheese, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C).

Prepare Tomatoes and Vegetables: On a large baking sheet, arrange the halved tomatoes, quartered onion, and garlic cloves. Drizzle them with olive oil, and sprinkle with salt, pepper, dried basil, oregano, and red pepper flakes (if using). Toss everything together until well coated.

Roast the Vegetables: Roast in the preheated oven for 30-35 minutes, or until the tomatoes are caramelized and the onions are soft. Keep an eye on them to avoid burning.

Blend the Soup: Once roasted, let the vegetables cool slightly. Transfer them to a blender or use an immersion blender. Add the vegetable broth and blend until smooth and creamy.

Simmer the Soup: Pour the blended mixture into a large pot over medium heat. Stir in the heavy cream (or coconut milk) and let it simmer for about 10 minutes, allowing the flavors to meld. Adjust seasoning with more salt and pepper if needed.

Serve: Ladle the creamy roasted tomato soup into bowls. Garnish with fresh basil leaves and serve with croutons or grilled cheese on the side for a delightful touch.
