Creamy Roasted Tomato & Garlic Pull-Apart Pasta

12 oz (340g) of pull-apart pasta (or any similar pasta)

2 cups cherry tomatoes (halved)

8 cloves of garlic (smashed but kept whole)

4 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and freshly ground black pepper (to taste)

1 cup heavy cream

1 cup grated Parmesan cheese (divided)

1 teaspoon Italian herbs (dried oregano, basil, thyme mix)

1/2 cup fresh basil leaves (for garnish)

Red pepper flakes (optional, for heat)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes and Garlic: In a baking tray, combine the halved cherry tomatoes and smashed garlic. Drizzle with 2 tablespoons of olive oil and balsamic vinegar. Season with salt and freshly ground black pepper. Toss until everything is evenly coated. Roast in the preheated oven for about 25-30 minutes, or until the tomatoes are blistered and the garlic is soft.

      Cook the Pasta: While the tomatoes and garlic are roasting, cook the pull-apart pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.

        Prepare the Cream Sauce: In a large skillet over medium heat, add the remaining 2 tablespoons of olive oil. Once hot, add the roasted tomatoes and garlic, including all the juices from the baking tray. Squeeze the roasted garlic out of its skins into the skillet.

          Combine with Cream: Reduce the heat to low, and pour in the heavy cream, stirring to combine. Bring to a gentle simmer, then add 3/4 cup of the grated Parmesan cheese and the Italian herbs, mixing until the cheese has melted and the sauce is creamy. Adjust seasoning with more salt and pepper if needed.
