Creamy Roasted Red Pepper Spaghetti Bake

12 oz spaghetti

2 large red bell peppers, roasted and peeled

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

3 cloves garlic, minced

1 small onion, finely chopped

2 tbsp olive oil

1 tsp dried basil

1 tsp dried oregano

Salt and pepper, to taste

Fresh basil leaves, for garnish

Preheat the oven: Preheat your oven to 350°F (175°C).

    Cook the spaghetti: Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente, following the package instructions. Drain and set aside.

      Prepare the roasted red peppers: If you haven't done so already, roast the red peppers over an open flame or in a preheated oven until charred. Place in a bowl, cover with plastic wrap, and let steam for 10 minutes. Once cooled, peel off the skin, remove seeds, and chop the peppers into small pieces.

        Make the creamy sauce: In a large skillet, heat olive oil over medium heat. Add the chopped onion and cook until translucent, about 4-5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

          Blend the roasted peppers: In a blender, combine the roasted red peppers, heavy cream, dried basil, oregano, salt, and pepper. Blend until smooth and creamy.

            Combine spaghetti and sauce: In a large mixing bowl, combine the cooked spaghetti, creamy roasted red pepper sauce, half of the Parmesan cheese, and half of the mozzarella cheese. Mix well to ensure all pasta is coated.

              Transfer to baking dish: Pour the spaghetti mixture into a greased 9x13-inch baking dish. Top with the remaining mozzarella and Parmesan cheese.

                Bake: Place in the preheated oven and bake for 25-30 minutes or until the cheese is melted and bubbly.
