Creamy Roasted Red Pepper Dip

2 large red bell peppers

1 cup cream cheese, softened

1/2 cup Greek yogurt

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon lemon juice

Fresh parsley, for garnish (optional)

Assorted crackers or sliced vegetables, for serving

Instructions
 

Roast the Peppers: Preheat your oven to 450°F (230°C). Place the red bell peppers on a baking sheet and drizzle them with olive oil. Roast in the oven for about 25-30 minutes, turning occasionally, until the skin is charred and blistered.

    Cool and Peel: Once roasted, remove the peppers from the oven and place them in a bowl. Cover the bowl tightly with plastic wrap or a kitchen towel to trap the steam, allowing the peppers to cool for about 15 minutes. This will make it easier to peel off the skin. After cooling, carefully peel the skin off the peppers and remove the seeds and stems.

      Blend the Ingredients: In a food processor, combine the peeled roasted red peppers, softened cream cheese, Greek yogurt, grated Parmesan cheese, minced garlic, smoked paprika, salt, black pepper, and lemon juice. Blend until smooth and creamy, scraping down the sides as needed.

        Taste and Adjust: Taste the dip and adjust the seasoning if necessary. If you prefer a smoother texture, you can add a splash of water or extra yogurt until the desired consistency is achieved.

          Chill: Transfer the dip to a serving bowl and cover with plastic wrap. Refrigerate for at least 30 minutes to allow the flavors to meld together.

            Serve: Before serving, give the dip a good stir and garnish with fresh parsley if desired. Serve chilled or at room temperature with assorted crackers, fresh vegetables, or pita chips.
