2 large red bell peppers

1 tablespoon olive oil

1 clove garlic, minced

1 cup cream cheese, softened

½ cup sour cream

½ cup grated Parmesan cheese

2 tablespoons fresh lemon juice

1 teaspoon smoked paprika

½ teaspoon crushed red pepper flakes (adjust for spice)

Salt and pepper to taste

Fresh herbs (like parsley or basil) for garnish (optional)

Instructions
 

Roast the Peppers: Preheat your oven to 450°F (230°C). Cut the red bell peppers in half, remove the seeds and stems, and place them cut side down on a baking sheet lined with parchment paper. Drizzle with olive oil. Roast in the oven for about 20-25 minutes, until the skins are blistered and blackened.

    Cool and Peel: Once roasted, remove the peppers from the oven and transfer them to a bowl. Cover the bowl with plastic wrap or a plate to trap steam, allowing the peppers to cool for about 10-15 minutes. This will help the skins come off easily. Once cooled, peel off the skins and chop the peppers.

      Blend the Ingredients: In a food processor, add the roasted red peppers, minced garlic, cream cheese, sour cream, Parmesan cheese, lemon juice, smoked paprika, and crushed red pepper flakes. Blend until smooth and creamy, scraping down the sides as needed.

        Season and Adjust: Taste the dip and season with salt and pepper according to your preference. If you like a little more heat, you can add more crushed red pepper flakes.
