Ingredients
  

1 large head of garlic

8 oz (226g) cream cheese, softened

1/2 cup Greek yogurt

2 tablespoons extra virgin olive oil

1 tablespoon fresh lemon juice

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 teaspoon salt

1/2 teaspoon black pepper

Optional: 2 tablespoons finely chopped fresh parsley for garnish

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Cut the top off the head of garlic to expose the cloves. Drizzle with a little olive oil and wrap it tightly in aluminum foil.

        - Roast the garlic in the preheated oven for 30-35 minutes, until the cloves are soft and caramelized. Allow to cool slightly.

          Prepare the Spread:

            - Once cooled, squeeze the roasted garlic cloves out of their skins into a mixing bowl.

              - Add the softened cream cheese, Greek yogurt, olive oil, lemon juice, thyme, salt, and black pepper to the bowl.

                Blend Until Creamy:

                  - Use a fork or a hand mixer to blend the ingredients until smooth and creamy. Adjust seasoning as needed.

                    Chill and Serve:

                      - Transfer the spread to a serving dish and refrigerate for at least 1 hour to let the flavors meld together.

                        - Before serving, garnish with chopped fresh parsley if desired.
