Creamy Pesto Chicken Pasta

8 oz (225g) penne pasta

2 tbsp olive oil

1 lb (450g) boneless, skinless chicken breasts, diced

3 cloves garlic, minced

1 cup heavy cream

1/2 cup basil pesto (store-bought or homemade)

1 cup cherry tomatoes, halved

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain and set aside.

    Sauté the Chicken: In a large skillet over medium heat, heat the olive oil. Add the diced chicken and season with salt and pepper. Cook for about 5-7 minutes, or until the chicken is browned and cooked through. Remove from the skillet and set aside.

      Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant.

        Make the Creamy Sauce: Lower the heat and pour in the heavy cream, stirring continuously. Add the basil pesto and mix well until fully combined. Let it simmer for about 2-3 minutes.

          Combine Ingredients: Add the cooked penne pasta to the skillet, along with the sautéed chicken and cherry tomatoes. Toss everything together, and if the sauce seems too thick, slowly add the reserved pasta water until desired consistency is reached.

            Add Cheese: Sprinkle in the grated Parmesan cheese and stir until melted and evenly distributed throughout the pasta. Taste and adjust seasoning with additional salt and pepper if necessary.

              Serve: Remove from heat, garnish with fresh basil leaves, and serve hot.
