Ingredients

2 ripe peaches, sliced

2 cups cherry tomatoes, halved (mix of red and yellow for color)

1 cup fresh mozzarella balls (bocconcini), halved

1/4 cup fresh basil leaves, torn

1/4 cup Greek yogurt

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 teaspoon honey

Salt and black pepper to taste

Optional: Crushed red pepper flakes for a kick

Instructions

Prepare the Dressing: In a small bowl, whisk together the Greek yogurt, olive oil, apple cider vinegar, honey, salt, and black pepper until smooth. Adjust seasoning as needed. If you like a bit of heat, stir in crushed red pepper flakes to taste.

Combine the Ingredients: In a large bowl, gently toss together the sliced peaches, halved cherry tomatoes, and mozzarella balls.

Add the Dressing: Pour the creamy dressing over the salad mixture. Use a spatula to gently fold the dressing into the salad until everything is well-coated.

Add Herbs: Gently fold in the torn basil leaves, being careful not to break the tomatoes and peaches too much.

Chill and Serve: Allow the salad to rest in the refrigerator for about 15 minutes to let the flavors meld together. Serve chilled as a refreshing side dish or a light main course.
