Creamy NOLA Shrimp & Corn Bisque

1 lb large shrimp, peeled and deveined

2 cups fresh corn kernels (or frozen if unavailable)

4 cups seafood or vegetable stock

1 medium onion, finely chopped

2 cloves garlic, minced

1 medium red bell pepper, diced

2 medium potatoes, peeled and diced

1 cup heavy cream

2 tbsp olive oil

1 tsp cayenne pepper (adjust to taste)

1 tsp smoked paprika

1/2 tsp thyme (dried or fresh)

Salt and black pepper to taste

2 green onions, sliced (for garnish)

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (for finishing)

Instructions
 

Sauté the Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Stir in the minced garlic and diced red bell pepper, cooking for another 3 minutes until fragrant.

    Add Potatoes & Stock: Incorporate the diced potatoes into the pot, followed by the seafood or vegetable stock. Bring the mixture to a boil, then reduce the heat and simmer until the potatoes are tender, about 15 minutes.

      Add Corn: Stir in the fresh corn kernels, cayenne pepper, smoked paprika, and thyme. Let it simmer for another 5-7 minutes to allow the flavors to meld together.

        Blend the Base: Carefully transfer about half of the soup to a blender and blend until smooth. Alternatively, use an immersion blender directly in the pot for a creamier texture. Return the blended soup to the pot.

          Add Shrimp & Cream: Mix in the shrimp and pour in the heavy cream. Cook on low heat for an additional 5-7 minutes, or until the shrimp are cooked through and have turned pink, being careful not to boil.

            Season to Taste: Adjust seasoning with salt, black pepper, and more cayenne if desired. Finish the bisque with a sprinkle of lemon zest for a fresh touch.

              Serve: Ladle the bisque into bowls, garnish with sliced green onions and chopped parsley for a pop of color, and enjoy!
