12 oz fettuccine pasta

2 tbsp olive oil

4 cups mixed mushrooms (cremini, shiitake, and button), sliced

4 cloves garlic, minced

1 tsp dried thyme

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1 cup heavy cream

1/2 cup grated Parmesan cheese, plus extra for serving

1/4 cup fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the rest and set aside.

    Sauté the Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook for about 5-7 minutes until browned and tender.

      Add Garlic and Spices: Stir in the minced garlic, dried thyme, and red pepper flakes (if using). Cook for another 1-2 minutes until the garlic becomes fragrant, being careful not to burn it.
