8 oz linguine or fettuccine pasta

1 lb shrimp, peeled and deveined

2 tbsp olive oil

3 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup heavy cream

1 cup grated Parmesan cheese

1 tsp red pepper flakes (adjust to taste)

Salt and freshly ground black pepper to taste

1 cup fresh spinach, roughly chopped

Zest and juice of 1 lemon

2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    - In a large pot, bring salted water to a boil. Add the linguine or fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

      Sauté the Shrimp:

        - In a large skillet over medium heat, add the olive oil. Once hot, add the shrimp. Season with salt, pepper, and half the red pepper flakes. Sauté for 2-3 minutes on each side until the shrimp are pink and opaque. Remove shrimp from the skillet and set aside.

          Prepare the Sauce:

            - In the same skillet, add the minced garlic and the halved cherry tomatoes. Sauté for 2-3 minutes until the tomatoes start to soften.

              Combine Cream and Cheese:

                - Reduce the heat to low and pour in the heavy cream. Stir in the grated Parmesan cheese until melted and combined. If the sauce is too thick, gradually add reserved pasta water until the desired creaminess is achieved.

                  Add Spinach and Shrimp:
