1 cup elbow macaroni

1 tablespoon olive oil

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup whole milk

1 cup shredded sharp cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 teaspoon garlic powder

1/4 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup grated Parmesan cheese

2 large eggs

1/4 cup breadcrumbs (optional, for topping)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners for easy removal.

    Cook the macaroni: In a pot of boiling salted water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

      Make the cheese sauce: In a medium saucepan over medium heat, melt the butter and olive oil together. Once melted, whisk in the flour and cook for about 1 minute until golden.

        Gradually add the milk while continuously whisking to avoid lumps. Continue whisking until the mixture thickens, about 3-5 minutes.

          Remove the saucepan from the heat and stir in the cheddar and mozzarella cheese until fully melted and creamy. Add the garlic powder, onion powder, smoked paprika, salt, and pepper. Adjust seasoning to taste.

            Combine the macaroni and cheese sauce: In a large mixing bowl, combine the cooked macaroni with the cheese sauce. Add the grated Parmesan cheese and mix well.

              Add eggs: In a small bowl, beat the eggs and then stir into the macaroni mixture until everything is well combined.

                Fill the muffin tin: Spoon the macaroni and cheese mixture into the prepared muffin tin, filling each cup about 3/4 full. If using, sprinkle breadcrumbs on top for extra crunch.

                  Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and set.

                    Cool and enjoy: Allow the muffins to cool in the tin for about 5 minutes before transferring them to a wire rack. Serve warm and enjoy your creamy, cheesy delights!
