8 oz elbow macaroni

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

2 cups whole milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and black pepper, to taste

2 cups shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko preferred for extra crunch)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Macaroni: In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce: In the same pot, melt the butter over medium heat. Add the flour, whisking constantly until a paste (roux) forms, about 1-2 minutes. Gradually whisk in the whole milk, ensuring no lumps remain. Continue to cook, stirring frequently, until the sauce thickens, about 5-7 minutes.

      Add Spices and Cheese: Stir in garlic powder, onion powder, smoked paprika, salt, and pepper. Remove from heat and add in the sharp cheddar cheese, mozzarella cheese, and half of the Parmesan cheese. Stir until the cheeses are melted and the sauce is smooth.

        Combine Pasta and Sauce: Add the cooked macaroni to the cheese sauce, stirring until the pasta is thoroughly coated.

          Prepare for Baking: Preheat your oven to 350°F (175°C). In a greased 9x13 inch baking dish, pour the mac and cheese mixture evenly.

            Add Topping: In a small bowl, combine the panko breadcrumbs with the remaining Parmesan cheese and a drizzle of olive oil. Mix until the breadcrumbs are evenly coated, then sprinkle over the mac and cheese mixture.

              Bake: Place the baking dish in the oven and bake for 25-30 minutes, or until the top is golden brown and crispy.

                Serve: Once baked, remove from oven and let it cool for a few minutes. Garnish with freshly chopped parsley before serving.
