1 cup orzo pasta

2 tablespoons olive oil

2 cloves garlic, minced

1 medium shallot, finely chopped

1 ½ cups vegetable broth

1 cup heavy cream

1 lemon (zest and juice)

½ cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon fresh thyme leaves

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Orzo: In a medium pot of salted boiling water, add the orzo. Cook according to package instructions until al dente. Drain and set aside.
