Creamy Herb Chicken & Basmati Rice

Ingredients
  

For the Chicken:

4 boneless, skinless chicken breasts

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1 cup heavy cream

1/2 cup chicken broth

1/4 cup grated Parmesan cheese

2 tablespoons fresh parsley, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon lemon juice

For the Basmati Rice:

1 cup basmati rice

2 cups chicken broth (or water)

1 tablespoon butter

1/2 teaspoon salt

1 bay leaf

Garnish:

Fresh herbs (parsley and thyme)

Lemon wedges

Instructions
 

Prepare the Chicken:

    - Pat the chicken breasts dry with paper towels. In a small bowl, mix together the salt, pepper, garlic powder, onion powder, and Italian seasoning. Rub the spice mixture over the chicken breasts.

      Cook the Chicken:

        - In a large skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and cook for about 6-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the skillet and set aside.

          Make the Creamy Sauce:

            - In the same skillet, reduce the heat to medium and pour in the heavy cream and chicken broth. Stir in the Parmesan cheese, and continue to cook for a few minutes until the sauce thickens slightly. Add the chopped parsley, thyme, and lemon juice, mixing thoroughly.

              Return Chicken to Sauce:

                - Place the cooked chicken back into the skillet, spooning the creamy herb sauce over the top. Let it simmer in the sauce for about 5 minutes to absorb the flavors.

                  Prepare the Basmati Rice:

                    - Rinse the basmati rice under cold water until the water runs clear. In a medium saucepan, combine the rinsed rice, chicken broth, butter, salt, and bay leaf. Bring to a boil over high heat, then reduce heat to low, cover, and let it simmer for about 15-18 minutes, or until the rice is tender and the liquid is absorbed. Remove from heat and fluff the rice with a fork.

                      Plate and Serve:

                        - To serve, place a generous scoop of basmati rice on a plate, top it with the creamy herb chicken, and drizzle more sauce over the top. Garnish with fresh herbs and a lemon wedge on the side.
