8 oz penne pasta

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

2 cups roasted Hatch green chilies, diced (fresh or canned)

1 cup heavy cream

1 cup vegetable broth

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded Monterey Jack cheese

Fresh cilantro, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, drain, and set aside.

    Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté until translucent, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.

      Add the Chilies: Stir in the diced Hatch green chilies, cooking for 2-3 minutes to combine the flavors. If using canned chilies, ensure they’re drained well before adding.

        Make the Cream Sauce: Pour in the heavy cream and vegetable broth, stirring well. Add cumin, smoked paprika, salt, and pepper. Allow the mixture to simmer for about 5 minutes, letting it thicken slightly.

          Combine Pasta and Sauce: Add the cooked penne pasta to the skillet, tossing to coat it in the creamy sauce. If the sauce is too thick, gradually add reserved pasta water until the desired consistency is reached.

            Melt the Cheese: Lower the heat and sprinkle the shredded Monterey Jack cheese over the pasta. Stir gently until the cheese melts and everything is well combined.

              Serve and Garnish: Remove from heat and serve hot. Garnish with fresh cilantro for a burst of flavor and color.
