8 oz linguine or spaghetti

1 lb large shrimp, peeled and deveined

3 tbsp olive oil

4 cloves garlic, minced

1/2 tsp red pepper flakes (optional)

1 cup heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

2 cups baby spinach

1 tbsp fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the linguine or spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.

    Sauté the Shrimp: While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.

      Add Shrimp: Add the shrimp to the skillet, season with salt and pepper, and cook for 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.

        Prepare the Sauce: In the same skillet, reduce the heat to low and pour in the heavy cream. Stir to combine, scraping any bits from the bottom of the pan. Gradually whisk in the Parmesan cheese and cook until the sauce is smooth and creamy, about 2-3 minutes.

          Combine: Return the cooked shrimp to the skillet and add the baby spinach. Stir until the spinach wilts, then add the drained pasta. Toss everything together, adding reserved pasta water a little at a time to reach your desired sauce consistency.
