Creamy Garlic Shrimp Pasta

8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup baby spinach

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (for finishing)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of pasta cooking water.

    Sauté Shrimp: In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the shrimp, season with salt and black pepper, and sauté for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the pan and set aside.

      Prepare the Garlic Sauce: In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant.

        Add Cream and Cheese: Lower the heat and slowly pour in the heavy cream. Stir to combine, then add the grated Parmesan cheese, stirring continuously until the cheese melts and the sauce thickens. If the sauce is too thick, add a little reserved pasta water to adjust consistency.

          Combine Spinach and Shrimp: Add the baby spinach to the sauce, stirring until wilted. Add the sautéed shrimp back to the skillet, combining well so that everything is coated in the creamy sauce.

            Mix with Pasta: Add the cooked fettuccine to the skillet. Toss well to ensure the pasta is thoroughly coated with the creamy garlic sauce. Adjust seasoning with salt and pepper if necessary.
