8 oz fettuccine pasta

2 tablespoons olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

3 cups fresh spinach (about 4 oz)

1 teaspoon Italian seasoning

Salt and pepper to taste

Red pepper flakes (optional, for a little heat)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté Garlic: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant, being careful not to let it burn.

      Make the Sauce: Pour in the heavy cream and bring to a simmer. Add the grated Parmesan cheese, stirring until melted and smooth. If the sauce is too thick, gradually mix in some of the reserved pasta water until you reach the desired consistency.

        Add Spinach: Stir in the fresh spinach and Italian seasoning. Cook until the spinach is wilted, about 2-3 minutes. Season to taste with salt, pepper, and optional red pepper flakes for heat.

          Combine with Pasta: Add the cooked fettuccine to the sauce and gently toss to coat the pasta in the creamy sauce. If necessary, add more reserved pasta water for a creamier texture.
