Creamy Garlic Parmesan Pasta with Spinach

Ingredients
  

8 oz fettuccine pasta

2 tbsp olive oil

4 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese (plus extra for garnish)

3 cups fresh spinach

1 tsp salt

½ tsp black pepper

½ tsp red pepper flakes (optional)

2 tbsp fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta:

    Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of the pasta cooking water, then drain the rest and set aside.

      Sauté Garlic:

        In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

          Make the Cream Sauce:

            Lower the heat and add the heavy cream to the skillet. Stir well, then add the grated Parmesan cheese. Mix until the cheese is melted and the sauce is creamy.

              Combine Pasta and Spinach:

                Add the reserved pasta water, salt, black pepper, and red pepper flakes (if using). Stir to combine, then add the cooked fettuccine and fresh spinach. Toss everything together until the spinach wilts and the pasta is evenly coated in the sauce.

                  Serve:

                    Remove from heat and plate the creamy garlic parmesan pasta. Garnish with additional Parmesan cheese and chopped parsley before serving.
