Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 cup chicken broth

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 cup cherry tomatoes, halved

2 cups fresh spinach

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Chicken: Season both sides of the chicken breasts with salt and pepper.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.

Sauté the Garlic: In the same skillet, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant, being careful not to burn it.

Create the Sauce: Pour in the chicken broth and bring it to a simmer. Use a spatula to scrape any brown bits from the bottom of the pan. Allow it to reduce slightly for about 2-3 minutes.

Add Cream and Cheese: Stir in the heavy cream, grated Parmesan cheese, and Italian seasoning. Mix well until the cheese is melted and the sauce is creamy.

Incorporate Vegetables: Add in the halved cherry tomatoes and fresh spinach. Cook for about 2-3 minutes until the spinach wilts and the tomatoes soften.

Combine Chicken and Sauce: Return the seared chicken breasts back to the skillet, spooning the creamy sauce over them. Simmer for an additional 2-3 minutes to heat the chicken through.

Garnish and Serve: Remove from heat, garnish with freshly chopped parsley, and serve hot.
