Ingredients

4 boneless, skinless chicken breasts

2 cups sliced mushrooms (cremini or button)

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

1 tablespoon olive oil

2 tablespoons butter

1 teaspoon dried thyme

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions

Prepare the Chicken: Pat the chicken breasts dry with paper towels. Season both sides generously with salt, pepper, and Italian seasoning.

Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5-6 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté the Mushrooms: In the same skillet, reduce the heat to medium and add the butter. Once melted, add the sliced mushrooms and sauté for about 5-7 minutes until they're golden and all the moisture has evaporated.

Add Garlic: Stir in the minced garlic and thyme, cooking for an additional 1-2 minutes until fragrant, being careful not to burn the garlic.

Make the Sauce: Pour in the chicken broth, scraping the bottom of the skillet to deglaze and capture any flavorful bits. Allow the broth to simmer for 2-3 minutes to reduce slightly.

Create Creaminess: Lower the heat and stir in the heavy cream, bringing everything to a gentle simmer. Allow the sauce to thicken for about 3-5 minutes. Adjust seasoning with salt and pepper as needed.

Combine Chicken and Sauce: Return the seared chicken breasts to the skillet, ensuring they are well-coated in the creamy mushroom sauce. Let them simmer together for an additional 5 minutes to meld the flavors.

Serve: Plate the chicken, spooning the creamy garlic mushroom sauce over the top. Garnish with freshly chopped parsley for a touch of color and added flavor.
